~Juice of 1 Lemon
~4 medium Artichokes
~1/2 cup extra-virgin olive oil
~1 small red onion, chopped
~2 heaping cups shelled fresh, or frozen fava beans, blanched or pealed
~Fine sea salt
~1/2 cup warm water
-Add the lemon juice to a large bowl filled with water
-Discard the tough outer leaves of the artichoke then scoop the fuzzy choke and discard.
-Cut the artichokes into 1/8 o ¼ inch thick slices and drop into bowl with lemon water
-Combine the olive oil and onion in medium saucepan and cook over medium heat (about 5 min.)
-Add favas and a large pinch of salt and cook 1-2 min.
-Add artichokes and the ½ cup warm water, cover and simmer gently until the favas and artichokes are tender (20-30 min.)
